This easy meal brings together two Hungarian favourites: crispy paprika-coated chicken bites and a refreshing creamy cucumber salad. The chicken is seasoned with sweet and smoked paprika before being coated in panko breadcrumbs and cooked until perfectly crisp, while the cool cucumber salad balances everything with its creamy garlic dressing.

Whether you cook the chicken in the air fryer or the oven, this recipe is simple enough for busy weeknights yet impressive enough to serve to family and friends. It's a delicious combination of warm, crispy chicken and cool, tangy cucumber salad that's full of flavour and ready in under an hour.

Ingredients

Crispy Paprika Chicken Bites

  • 300 g chicken breast (about 10 oz), cut into bite-sized pieces

  • ½ tsp sweet paprika

  • ½ tsp smoked paprika

  • ½ tsp garlic powder

  • ¼ tsp salt

  • ⅛ tsp black pepper

  • 30 g panko breadcrumbs (about 1 cup)

  • 1 tbsp olive oil

Hungarian Cucumber Salad

  • ½ cucumber (about 200 g / 7 oz), thinly sliced

  • ¼ tsp salt

  • 100 g crème fraîche or sour cream (about ½ cup)

  • 1 small garlic clove, finely grated

  • ½ tsp white vinegar

  • ½ tsp sugar

  • Fresh dill, finely chopped (about 1 tbsp)

  • ½ tsp sweet paprika, for garnish

To Finish

  • Fresh dill or parsley

  • Extra sweet paprika for sprinkling

Instructions

1. Prepare the Cucumber Salad

Slice the cucumber as thinly as possible using a sharp knife or mandoline. Place the slices into a bowl with the salt and toss well. Leave them to rest for 15 minutes. Once rested, gently squeeze out the excess liquid using your hands or a clean kitchen towel.

In a separate bowl, combine the crème fraîche (or sour cream), grated garlic, white vinegar, sugar, and chopped dill. Fold the cucumber into the dressing until evenly coated. Cover and refrigerate while you prepare the chicken.

2. Prepare the Chicken

Cut the chicken breast into evenly sized bite-sized pieces. Add the olive oil, sweet paprika, smoked paprika, garlic powder, salt, and black pepper. Mix well until every piece is coated. Set aside for 15 - 30 minutes.

Sprinkle over the panko breadcrumbs and toss until the breadcrumbs stick evenly to the chicken.

3. Air Fry the Chicken Preheat the air fryer to 200°C (390°F). Arrange the chicken pieces in a single layer in the air-fryer basket, leaving space between them for the hot air to circulate. Lightly spray the chicken pieces with oil. Air fry for 10–12 minutes, shaking the basket or turning the pieces halfway through, until golden, crispy, and fully cooked

4. Check for Doneness

The chicken is fully cooked when the juices run clear and the thickest pieces reach an internal temperature of 75°C (167°F) for at least 30 seconds (or 74°C / 165°F).

5. Serve

Spoon the chilled cucumber salad into a shallow serving bowl. Arrange the crispy paprika chicken bites alongside. Finish with a light sprinkle of sweet paprika and freshly chopped dill or parsley. Serve immediately while the chicken is still hot and crispy.
