Ingredients

  • 280g chicken thighs/breast

  • 1 medium onion

  • 40g sultanas

  • 1 TBSP korma curry powder

  • 1 TBSP Tomato paste

  • 2 cardamom pods

  • 300ml chicken stock

  • salt & pepper to taste

Instructions

  1. Begin by heating 1 tablespoon of olive oil over medium heat. Add the sliced onion, season with salt and pepper, and fry until soft and golden-brown. Once done, transfer the onions to a plate and set aside.

  2. In the same pan, add a bit more oil if needed, and place the diced chicken in the pan. Fry for a few minutes until the chicken is seared on all sides. Then reintroduce the reserved onions, along with the curry powder, and pour in 300 ml of chicken stock. Stir in the tomato paste, sultanas, and cardamom pods, seasoning again with salt and pepper to taste.

  3. Finally, stir in the bulgur wheat and allow it to cook for 5 minutes on low heat. Remove the pan from the heat, cover it with a lid, and let it rest for 15 minutes until all the water is absorbed and the bulgur is tender.
