Ingredients:

Haddock

  • 280gr Haddock or cod

  • 1 egg

  • 3 TBSP all-purpose flour

  • 60gr Panko breadcrumbs

  • 1 tsp chipotle powder

  • 10gr chopped parsley

  • 1 tsp garlic powder

  • 1tsp MSG (optional)

  • Salt & Pepper to taste

  • Vegetable oil for shallow fry

Aioli sauce

  • 50 ml mayonnaise

  • 1/4 Lemon juice

  • 1 garlic glove

  • Salt & Pepper to taste

Instructions

  1. Cut the fish into equal pieces and sprinkle salt and pepper on each side.

  2. Prepare the ingredients for the breadcrumb mixture. In a medium bowl, combine chipotle powder, garlic powder, chopped parsley, salt, and pepper. In a separate bowl, beat the eggs with a pinch of salt and pepper. In another bowl, place the flour.

  3. Bread the fish by first coating each piece in flour, shaking off the excess, then dipping in the beaten egg, and finally coating with the breadcrumb mixture.

  4. Heat oil in a pan and shallow fry the breaded fish fingers. Cook for about 3-4 minutes on each side or until golden and crispy. Then, remove them onto a plate lined with kitchen paper to drain.

  5. To prepare the aioli sauce, in a small bowl, add mayonnaise, minced garlic, lemon juice, and salt & pepper to taste. Mix everything until well combined.

  6. Serve immediately.

Notes

For a healthier option, you can prepare the fish in an air fryer. First, lightly spray the fish with oil. Then, place it in a preheated air fryer set to 190°C (374°F) for 8-10 minutes, flipping halfway through the cooking time. Ensure the internal temperature of the fish reaches 54-57°C (130-135°F) before serving.
