Ingredients
- 120g red lentils 
- 1 can (230g) green lentils 
- 300g chicken tights/breast 
- 1 medium onion 
- 2 garlic cloves 
- 15g fresh ginger 
- 1 tbsp curry powder 
- 1/2 tsp coriander powder 
- 1 tsp turmeric 
- 500ml chicken stock 
Instructions
- In an ovenproof casserole dish, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onions until they are softened and lightly browned. 
- Meanwhile, preheat the oven to 200°C (392°F). 
- Rinse the green and red lentils thoroughly under cold running water. 
- To the casserole, add minced garlic cloves, ginger, curry powder, coriander powder, and turmeric. Sauté for 1 minute to release the flavours, then add the rinsed lentils and stir well to combine. 
- Pour in the chicken stock and season with salt and pepper to taste. Add the chicken pieces, stir, and bring the mixture to a boil. Cover the casserole with a lid and place it in the preheated oven to cook for 15 minutes. 
- After 15 minutes, carefully remove the casserole from the oven, give the dhal a good stir, and return it to the oven uncovered for another 10 minutes to finish cooking. 
- Serve the chicken dhal hot, accompanied by warm naan bread.
