Ingredients

  • 280g chicken thighs - diced

  • 2 tbsp olive oil

  • 1tsp ground cumin

  • 1/2 tsp ground coriander

  • 1 tsp turmeric

  • 1 tsp garam masala

  • 1/2 tsp ground ginger

  • 1 onion - chopped

  • 2 garlic gloves - chopped

  • 1 eggplant - diced

  • 20g coriander - chopped

  • 1 cup/ 250ml chicken stock

  • Salt & pepper

Instructions

  1. In a bowl, combine chicken, olive oil, ground cumin, coriander, turmeric, garam masala, ginger, cinnamon, salt, and pepper. Mix well, then cover the bowl with cling film and marinate in the refrigerator for 1 hour.

  2. Heat a little olive oil in a pan over medium heat, add the marinated chicken, and fry for 3-4 minutes. Incorporate the diced onion and garlic, continuing to fry until the onion softens.

  3. Stir in the diced aubergine (eggplant), frying for a few more minutes. Add the fresh chopped cilantro and chicken stock. Season with salt and pepper to taste, cover with a lid, and let it simmer for 10-12 minutes or until the aubergine is tender.

  4. To thicken the sauce, prepare a slurry by mixing 1 tablespoon of cornstarch with a little water. Stir the slurry into the chicken mixture until the sauce reaches the desired consistency.

  5. Serve the dish with white rice, couscous, or pasta as you prefer.
