Ingredients

  • 250g all-purpose flour

  • 150g sugar

  • 4 eggs

  • 7g baking powder

  • 150ml sunflower oil (vegetable oil)

  • 150ml water

  • 3 tbsp fine dark cocoa powder

  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven to 170°C (338°F).

  2. Start by separating the eggs, placing the whites in one bowl and the yolks in another. Beat the whites until stiff peaks form and set aside.

  3. In a separate bowl, sift together the flour and baking powder.

  4. In another bowl, whisk the sugar with the egg yolks until the mixture becomes creamy and takes on a pale colour.

  5. Gradually mix in the vegetable oil, continuing to whisk. Then, add water and the flour-baking powder mixture, combining everything until you achieve a smooth, lump-free batter.

  6. Gently fold the egg whites into the batter, being careful to maintain their volume.

  7. Divide the batter in half, placing each half into separate bowls. Stir vanilla extract into one half and cocoa powder into the other.

  8. Line a baking tray with parchment paper. Alternately spoon the vanilla and cocoa batters into the tray.

  9. Create a marbled effect by running a cocktail stick or skewer through the batter, making swirls.

  10. Bake in the preheated oven for 25-30 minutes, or until a cake tester inserted into the centre comes out clean.

  11. Remove from the oven and transfer the cake from the tray to a cooling rack. Allow it to cool completely before serving.
