Hearty Pork and Green Bean Soup - Comforting & Healthy

Ingredients

  • 500g pork or beef diced

  • 1 medium onion

  • 2 cloves garlic

  • 2 carrots

  • 200g potatoes diced

  • 200g green beans

  • 2.5L chicken stock or water

  • 2 bay leaves

  • 2 TBSP sweet paprika

  • 2 tsp ground cumin

  • 60g crème fraîche / sour cream

  • 1 TBSP All purpose flour

  • salt & pepper to taste

Instructions

  1. In a large pot, heat 2 tbsp of olive oil and sauté the chopped onion until translucent. Then add the diced pork, continuing to fry for 5 minutes.

  2. Turn off the heat, stir in the paprika powder thoroughly, and then turn the heat back on. Add cumin, and bay leaves, and season with salt and pepper to taste.

  3. Pour in 2.5 L of chicken stock and allow it to simmer until the pork is nearly tender.

  4. Then add 2 sliced carrots and 3 medium diced potatoes. Season again with salt, pepper, and more cumin if desired.

  5. When the vegetables are nearly tender, add the green beans cut into approximately 1.5-inch pieces.

  6. Remove 2 ladles of liquid from the soup and set aside.

  7. In a bowl, whisk 60g of crème fraîche with a little bit of water, then add 1 tbsp of flour. Continue mixing until smooth and lump-free. Stir in the reserved soup liquid, then gradually incorporate this mixture back into the soup. Cook for a few more minutes.

  8. Serve the soup with small pasta, such as star pasta or orzo.
