Ingredients

  • 500ml / 16.907oz Whole milk

  • 3 egg yolks

  • 4 TBSP White sugar

  • 2 TBSP Vanilla extract

  • 1TBSP Cornstarch

  • 5 Gelatine sheets

  • 200g Whipped cream

Instructions

  1. First, pour the milk into a pan and begin heating it on low heat.

  2. In a bowl, whisk together the egg yolks, sugar, cornstarch, and vanilla extract until the mixture is pale and creamy.

  3. Place the gelatine leaves in a separate bowl and cover them with cold water; set aside to soak.

  4. Gradually add the egg mixture to the warm milk, stirring frequently. Cook until the mixture thickens, but be careful not to let the milk boil.

  5. Remove the pan from the heat and add the drained gelatine leaves, stirring until they dissolve completely. Set the cream mixture aside and let it cool to room temperature, making sure the gelatin does not set during this time.

  6. Whisk the whipping cream until soft peaks form, then carefully fold it into the cooled cream mixture.(notes)

  7. Brush the moulds with vegetable oil, then pour in the bavarois mixture. Refrigerate for about 6 hours, or until the bavarois is firmly set.

Notes: In the video, I demonstrate using ready-made whipped cream, which offers a quicker alternative.
