  • 150 cucumber

  • 1 tbsp olive oil

  • salt to taste

  2. Next, peel a clove of garlic, slice it in half, and remove the germ or the inner shoot to reduce bitterness.

  3. Blend all the ingredients using a hand blender or a traditional blender until you achieve a smooth texture.

  4. Optionally, for a finer soup, strain the mixture through a colander, pressing down with a spatula to extract as much liquid as possible.

  5. Stir in 1 tablespoon of extra virgin olive oil and season with salt to taste. Refrigerate the gazpacho for a few hours to allow the flavours to meld.

  6. Serve the gazpacho chilled, garnished with finely chopped tomatoes, cucumber, and a drizzle of extra virgin olive oil.
