Ingredients

  • 3 medium white potatoes

  • 1 medium onion diced

  • 4 eggs

  • Olive oil

Instructions

  1. Start by peeling and slicing the potatoes into thin slices.

  2. Heat oil in a nonstick pan over medium-high heat. Once hot, add the potatoes (you may need to do this in two batches) and the finely chopped onion. They should gently bubble in the oil, not fry vigorously. Stir occasionally, until the potatoes and onions are meltingly tender, which will take about 20-25 minutes.

  3. Meanwhile, whisk 4 eggs with a pinch of salt and pepper.

  4. Once the potatoes are ready, place them in a strainer to remove any excess oil.

  5. Then, combine the potatoes with the egg mixture and mix well.

  6. Wipe the pan clean with a paper towel and add 1/2 tbsp of the reserved frying oil. Place it over medium heat (not high, to avoid burning).

  7. Pour the potato-egg mixture into the pan and cook for 4-5 minutes. (You can use a spatula to gently lift the edges to check if is ready)

  8. Cover the pan with a flat plate, then place a kitchen towel over the plate. Firmly hold the kitchen towel with one hand and the pan's handle with the other. In a quick motion, flip the pan to turn the tortilla onto the plate.

  9. If needed, add a bit more oil to the pan and gently slide the tortilla back in to cook for another 4-5 minutes.

  10. Serve with mayonnaise or aioli, or alongside a salad.
