Ingredients

  • 200g All-purpose flour

  • 2 tbsp cornstarch

  • 2 tbsp sugar

  • 1/2 tsp baking soda

  • 2 tbsp Sunflower oil or vegetable oil

  • 350 ml water

  • Salt to taste

Apple filling

  • 4 apple

  • 100ml water

  • 2 tsp brown sugar

  • 1 tsp cinnamon

  • 1/2 lemon zest

Instructions

  1. For the batter In a bowl, combine all the dry ingredients: flour, cornstarch, sugar, baking soda, and salt. Mix well.

  2. Gradually add water, stirring constantly, until you have a smooth, lump-free batter. Stir in the vegetable oil (sunflower oil is recommended) and allow the batter to rest for 15 minutes.

  3. For the Filling: In a saucepan, combine the diced apples, water, sugar, cinnamon, and lemon zest. Bring the mixture to a boil, then simmer for 8-10 minutes until the apples are tender.

  4. Cooking the Crepes: Heat a crepe pan or a non-stick skillet over medium heat and lightly brush it with oil. Pour a small ladleful or 1/3 cup of the batter into the pan, tilting and rotating it to spread the batter thinly and evenly.

  5. Cook for about one minute or until the bottom of the crepe is lightly golden. Carefully flip it with a spatula and cook for an additional 30 seconds. Before adding new batter for the next crepe, give the batter a quick stir. Continue until all the batter is used.

  6. To Serve: Fill each crepe with the warm apple compote, sprinkle a bit of sugar on top, and serve.
